Hootenanny Pancake

6 eggs
1 cup flour
1 cup milk
1/2 tsp salt
1/4 cup butter

Beat eggs, flour, milk, and salt for 5 minutes. Meanwhile, heat oven to 425. Place butter in a 9x13 glass baking dish. Put in hot oven just long enough to melt butter. Remove and pour beaten egg mixture into hot butter. Bake at 425 for 20 minutes. Pancake will "grow" up sides of pan. Cut into slices and top with powdered sugar and fresh fruit, or with maple syrup.

We make these all the time and my boys (5&2yrs.) love them! 1/4 cup butter is PLENTY in my opinion. I think these are really awesome with fresh strawberries!

These are good. My mom used to make them when I was a kid. I think we called them German pancakes. Is this the same thing? Or am I thinking of something different?

Yep, you're right. Same thing as German pancakes. My sister and I just think Hootenanny Pancake is more fun to say than German pancake.

Hootenany is more fun - I think I will adopt it! We also love these. Brandon thought that I was crazy when we were first married and he saw me spread mine with peanut butter and top it with maple syrup. Not for the calorie conscious, but it's what I grew up with and now Brandon loves it too! :)

I've never heard anyone but my family call these "Hootenanny pancakes." Any idea where that name came from? I've had a lot of people ask me. My kids love them. They just dust them with powdered sugar.
